Ingredients
1 2 cups all purpose flour plus more
2 2 1/2 teaspoon baking powder
3 1/2 teaspoon teaspoon salt
4 ¼ -1/3 cup cup sugar
5 1/2 teaspoon crushed cardamom spice
6 1/2 teaspoon grated nutmeg or cinnamon
7 2-3 Tablespoons grated coconut or coconut flakes
8 1 large egg
9 3 tablespoons melted butter
10 1/2 cup evaporated milk /coconut milk
11 warm water as needed
12 Powdered sugar or cinnamon sugar to sprinkle
13  Caramel sauce
14 Vegetable oil for deep-frying

STEPS BY STEPS GUIDE

  • In a large bowl combine all dry ingredients, flour, sugar, baking powder, salt, sugar, cardamom, and nutmeg. Whisk together
  • Gently add all the liquid ingredients, eggs, butter, and milk. Combine until the mixture comes together and the dough is smooth. If it is too sticky add a little flour. If it is too hard, adds a little water. The dough should not be too sticky, when touched, it will have less flour than more flour.
  • Roll out the dough until it is 1 inch thick. Cut into small pieces or triangles as in the picture.
  • In a large saucepan, pour vegetable oil, until it is at least 3 inches (or about 5 centimeters) tall (very little will result in a flatter mandazi and place over medium heat until the oil is 350 degrees.
  • Fry until golden brown for about 3-5 minutes, depending on the size. Remove with a slotted spoon and drain on a paper napkin. Serve hot

MAHITAJI 
1 Unga – 5 Vikombe.

5 Hamirah – 2 Vijiko vya Supu.
6 Hiliki – 1/2 Kijiko cha chai.
7 Mafuta ya kukaangia.

NAMNA YA KUTAYARISHA NA KUPIKA.

6. Kanda unga mpaka uwe laini.
7. Kata madonge *12 au 15 uyaweke kwenye baraza iliyonyunyiziwa unga na uyafunike ili yapate kufura na yasikauke.
*Ukipenda maandazi manene fanya madonge 12. Ukipenda mepesi fanya madonge 15.
8. Madonge yakifura, sukuma kama chapati kisha ukate mara nne kama kwenye picha. Endelea kufanya hivyo na madonge yote. Yaache maandazi yafure tena baada ya kukata kama dakika 15 hivi.
9. Pasha mafuta moto kwenye karai kisha Kaanga maandazi kwenye mafuta ya moto. Upande mmoja ukifura na kuwa rangi nzuri geuza upande wa pili. Endelea nama hii mpaka maandazi yote yawe tayari.
